We added MySQL Force Timezone (UTC) to normalize MySQL TIMESTAMP columns to UTC during replication.

For example, if orders.created_at is a MySQL TIMESTAMP, enabling this setting ensures Artie writes it as TIMESTAMP WITH TIME ZONE (UTC), so 2026-03-01 10:00:00 is consistently interpreted as 10:00 UTC across destinations.
